^{Founded in Edgewater, Chicago, in the winter of 2004, Indie Sushi Thai brings together the creativity of art and the passion for Thai and Japanese cuisine.}

^{Executive Chef Iggy Waranon and Co-Owner Gui Prasartkul arrived in Chicago in 1998 to pursue their artistic interests, studying photography at Governors State University and filmmaking at the School of the Art Institute of Chicago. Their creative journey eventually led them to explore another art form: food.}

^{Inspired by Chef Iggy’s Thai heritage, Japanese culinary traditions, and the guidance of a close friend who was a Japanese food critic, they developed a distinctive approach to Asian fusion cuisine. Chef Iggy’s culinary foundation began in her mother’s kitchen and was further developed at Washburne Culinary School, while Gui’s business vision helped bring their shared concept to life.}
